These are North Star Farms best White American Bresse chicks — top of the North Star Line! They come from 15 years of careful breeding and are some of the rarest and most beautiful chicks North Star Farms offers. With bright white feathers, deep blue legs, and sometimes even dark eyes, these chicks grow into stunning birds that truly stand out in any flock.
These chicks are sold as straight run, which means they are not sorted by gender — you’ll get a mix of males and females, but North Star Farms doesn't choose which ones. The chicks have very white chick fuzz and are chosen for their strong looks and healthy growth. If you’re looking to build a show-quality flock or start with the very best breeding stock, these are the birds for you. Quantities are limited!

Names: American Bresse, White American Bresse, and Gauloise are the same U.S. type—descended from France’s Bresse Gauloise (the protected French name can’t be used here).

Source: These birds come from North Star Farms, which has kept a closed, meat-focused line for 8+ years, originally descended from the first Greenfire Farms import (later imports were mixed by others).

Selection goals: hens that lay 5–6 eggs/week and table birds that finish around a 5 lb carcass at 22–23 weeks after a 2-week milk-soaked feed finish. Typical growth target: cockerels ~5 lb live at 16 weeks.

Type & look: bred toward the commercial/meat type—stockier, wide-bodied, heavier legs/thighs—while preserving classic Bresse eating quality (not a Cornish-cross replacement).
